The plex app requiring transcoding on the server side because it uses the built in iOS media player is purely a software limitation. It looks like you need to do a little more reading there buddy. If you are expecting Plex to work like VLC, then it isnt for you.

This seems like a bug with the iOS Plex app since the VLC app can direct play MKV files just fine so it’s definitely not an iOS device limitation. If the container is MP4 then it direct plays just fine. After a little more research it seems there’s an issue with the iOS Plex app always transcoding MKV files no matter what.
